Fall Flavor at Animal Kingdom Lodge | DVC Cooking

Ingredients

  • Glaze
  • 1 tbsp Butter (starter)

  • 1/4 cup Brown Sugar

  • 1 cup Apple Cider

  • 1/4 tsp Dijon Mustard (optional)

  • 2 tbsp Butter (finisher)

  • Chicken
  • 2 tbsp Vegetable Oil or Butter

  • 2 cloves Garlic

  • 1 sprig Rosemary

  • 1 pkg Boneless, skinless chicken thighs

  • As Needed N/A Salt and Pepper

Directions

  • Pat chicken thighs dry with paper towels, then season with salt and pepper. If you have the time, leave them sitting for 30 minutes to 1 hour for an even juicier end-product.
  • Place your oven rack on the middle level and preheat to 350 degrees.
  • Put a small saucepan over medium and melt 1 tbsp butter. Remove from heat, stir in 1/4 cup brown sugar until completely combined, and return to heat.
  • Add 1 cup apple cider and 1/4 tsp dijon mustard to the starter. Stir completely and bring to a boil, continuing the boil for 15-20 minutes and stirring occasionally. You can check for reduction by stirring–if the glaze is starting to stick to the sides of the pot, it’s clearly thicker and you’re getting there! As this happens, cook the chicken.
  • Heat 2 tbsp vegetable oil in your large frying pan over medium-high heat until shimmering and easy to swirl. Smash two cloves of garlic and heat with one sprig of rosemary, stirring just until aromatic. Place the chicken and let it cook on one side just until browned, then flip and do it again. While your chicken is browning on side two, your glaze should be nearly done. Reduce the heat as low as possible and stir in two more tablespoons of butter. If needed, add a bit of brown sugar to find a bit more thickness.
  • Briefly transfer your chicken to a plate and pour most of the grease from the saucepan into an empty cup. Leave this to the side and let it cool – dispose of it later*. Bring the chicken back on and place the pan in the oven for 5-7 minutes. Pull from the oven.
  • Are you done? On your left hand, touch your thumb and ring finger together. Use your other thumb to press down on the palm of your hand below the left thumb. That’s how your chicken should feel. If you’re there, switch the oven to broil, spoon on a bit of apple cider glaze, and broil for 1-2 minutes. Plate your chicken and finish with the glaze. You’re all done!

Notes

  • Properly disposing of oil: Do NOT pour down the drain. Leave the oil in a cup to cool, using the fridge overnight as an option. If not solidified, combine with a bit of flour to create a mixture and scrape that mixture into the trash.
