If you’re anything like me, the anticipation for a new Disney dining experience is one of life’s greatest joys. Well, get ready, because the wait is almost over! The brand-new Wailulu Bar & Grill, nestled within the highly anticipated Island Tower at Disney’s Polynesian Villas & Bungalows, is set to open its doors on December 17th, and I couldn’t be more excited to dive into the menu Disney has just revealed!
A Culinary Adventure at the Island Tower
The Wailulu Bar & Grill is promising to bring more than just tasty bites; it’s creating an immersive dining experience that feels like stepping into the heart of Polynesia. Imagine taking in the stunning view of the Seven Seas Lagoon, surrounded by Polynesian-inspired artwork, some of which even incorporates recycled materials and reclaimed fishing nets. And if you’re lucky enough to visit during the evening, you’ll even catch some breathtaking fireworks from Magic Kingdom—what could be more magical?

The name “Wailulu” itself brings a sense of calm, as it combines the Hawaiian words “wai,” meaning water, and “lulu,” meaning calm. It feels fitting for a serene retreat at the edge of the Polynesian-inspired paradise that Disney has so beautifully crafted. Whether you’re starting your day with a coffee and morning pastry or stopping by for lunch and dinner, this menu promises to deliver flavors that reflect the culture of the Pacific Islands.
Exploring the Menu: Food Items
The menu at Wailulu Bar & Grill is an exciting combination of flavors influenced by the Polynesian Islands, from New Zealand to Fiji. The offerings range from creative small bites to delicious mains and sweet desserts. Here are some of the standouts that have me daydreaming about my next Disney vacation:

- Sweet Potato Hummus: Served with crispy chickpeas, espelette pepper dust, and breadfruit tostones—this unique twist on hummus looks like the perfect shareable starter.
- Ahi Tuna Crisps: Marinated ahi tuna atop crispy fried wontons, with avocado crema, sriracha-aioli, and soy glaze—I can already tell this will be a fan favorite!
- Wayfinder Burger: Double patties with American cheese, onion jam, volcano sauce, and a choice of mac salad or sweet potato fries. Yes, please!
- Beef Short Rib Loco Moco: A twist on a classic Hawaiian dish with shiitake mushroom gravy, crispy rice cake, and a fried egg—I’m ready for this savory comfort dish.
- Poke Bowl: Sushi-style rice with pickled cucumbers, vegetables, and spicy poke sauce, topped with your choice of ahi tuna, grilled teriyaki chicken, or grilled tofu—a refreshing and customizable option.
- Chocolate Cake with Kona Coffee Essence: As a chocolate and coffee lover, this dessert with salted caramel ganache and Chantilly cream is definitely on my must-try list.

The Drinks: An Island-Inspired Twist
No Polynesian-inspired experience would be complete without some specialty drinks, and the Wailulu Bar & Grill beverage menu looks fantastic. From refreshing non-alcoholic options to creative cocktails, there is truly something for everyone:
- Pandan Gin Gin Mule: This unique drink combines pandan-infused gin, lime juice, and ginger beer. I’m curious to see how the pandan flavor adds to this classic cocktail.
- Passionfruit and Pineapple Daiquiri: Made with Ten to One Caribbean White Rum and Minute Maid Passion Fruit Orange Guava Juice—it sounds like the tropical getaway we all need.
- Hibiscus Iced Tea: A simple yet flavorful option for those looking for a non-alcoholic treat. It’s infused with hibiscus flower, lime, and agave nectar, making it a refreshing choice.

Breakfast Offerings
If you’re planning to stop by in the morning, Wailulu also has a breakfast menu! The highlight here is the Pineapple-Coconut Bread, which is only available for breakfast. I can already picture myself enjoying a slice of this sweet bread with a warm cup of coffee while gazing out at Seven Seas Lagoon—absolute bliss!

Kids’ Menu
For the younger guests, Wailulu has a couple of options that are sure to please even the pickiest eaters, including White Cheddar Macaroni & Cheese and Grilled Teriyaki Chicken. It’s nice to see some simple yet delicious choices that kids will love while parents can enjoy the more adventurous dishes.
Why Wailulu Bar & Grill is a Must-Visit
There are plenty of reasons to add Wailulu Bar & Grill to your must-visit list, but for me, it’s all about the fusion of flavors, the relaxed vibes, and that unbeatable setting. Disney always has a way of blending culture, storytelling, and culinary excellence, and I expect nothing less here.
The Polynesian Island Tower itself is already an exciting addition to Disney’s Polynesian Villas & Bungalows, and having Wailulu Bar & Grill just adds another layer of excitement for those planning to visit. Whether you’re enjoying a laid-back lunch, grabbing a late-night cocktail, or simply taking in the views, I have a feeling this place is going to be a hit.

December 5, 2024Can’t wait!!! We will be there staying at The Longhouses in January and then again in May staying in a 2 bedroom at the Tower. I will for sure keep looking for updates on possible reservations but until then, we will try to walk up. What an exciting time to be an owner at The Polynesian.
